Martin,
For elementary school children, we stick with the ABCQs, Air, Brakes, Chain, and Quick Release. We have kids clean their bikes, inflate tires to proper pressure, test and adjust their brakes (adjusting brakes may be a challenge for kids, given the variety of braking systems), lubricate their chain, and make sure their wheels are properly affixed to the frame. We also stress the necessity to wear a helmet, lock their bike, be visible, and obey the rules of the road.
The League of American Cyclists has some decent online resources in multiple languages https://bikeleague.org/ridesmart/smartcyclingresources/
Good luck.
