We put most donations into the parts bins and charge a fixed price. $4 for an rd, $5 for a pair of pedals. Fancier stuff goes into the case at our register. We tag those with prices usually by looking up the part on ebay's completed listings and marking 50-75% of the average price it sold for. Prices in real scenarios usually end up much less but we were having a problem with "pickers" so wanted to discourage folks who were just buying stuff for resale from taking all the stuff that folks fixing their commuter bike needed.

The $5 is often adjusted for those in need.
