-Do you think this is a good way to get the word out?
Absolutely...Staple a small piece of paper with info to each bike before it goes back out. Have a good representative of your org who can chat with people who have questions/want to know more.
-do you think this is a good way to raise money for the shop (tip jars)?
Yep! If you have t-shirts or other merch type stuff, some folks are more comfortable buying something than giving a donation/tip.
-what did you have to do for logistics/liabillity and planning ahead?
Liability, nothing. As long as you have a good system in place to deal with people who think you damaged/lost their bike or who lost their ticket you shouldn't have any problems. The organizers will feel better to know you're thinking about these issues and know what to do about them.
Ahead of time we got commitments from volunteers (weeks ahead), planned what we were bringing (tools, stand, water, bananas, display, stickers etc.), got t-shirts to identify volunteers and tried not to drink too much the night before, ha.
I'm sure you already checked the valet page on the wiki, but here it is again for good measure: http://www.bikecollectives.org/wiki/index.php?title=Valet_Bike_Parking
