Here is a picture of our pop-up bike shop operation.  We show up at the farmers market and some special events through out the summer.  We haul everything in the Surly trailer.  2 stands, lightweight camping tables,canopy etc.  This year I used an electric asset,  last year I did the whole summer without electric assist.

Also affixed another plate to the bottom of the Park Tools allen key holder to make a benchmounted holder
All the tools fit in the Park Tools box as shown
Gloves and lube, folder, first aid kit, rags, etc carried in the army rucksack
Trailer easily carries two workstands and tools, could probably carry 3 stands with no problem
Added detail of the hitch if useful...

Maybe a smaller scale than what you're doing?
I wanted to keep things simple, also, we have very limited storage space in a high crime area - this 'trolley trailer' can be bought inside and stands upright, taking up very little room at the back of our workshop
This design also allows us to bring our signage stand and cable it on site (making the stand able to used on windy days)
