At the Bike Church, we use Google Docs and calendar for all these things. . . for better, or for worse.
It works great.
We and some other non-profits use Volgistics. It's a somewhat
expensive but very powerful database. It allows you to put signup
forms for volunteers online, schedule shifts online, email volunteers,
manage assignments and preferences, etc. I find it to be a great
database for tracking volunteers and discriminating between different
