We use it extensively at SLO Bike Kitchen in San Luis Obispo, CA.  Our organization is quite small, but we've developed a good amount of documentation, task/inventory/volunteer tracking documentation, all stored in Google Docs.  For some things created in Illustrator or Word, you can store those files on Google docs for sharing purposes.

Main advantages for us:
- We do minimal work in the office, so being able to access the documents from anywhere is necessary.
- We do a lot of collaboration on those docs, since there is no single responsible person
- Google docs keeps track of revisions and changes, so you can figure out what/how/who changed things.

Two serious problems we encountered:
- Setting up access permissions for those who do not have a Google account is unnatural.
- Page layout for making signs and precise layout in documents is pretty bad (when it is printed)


The calendar, we also use this for volunteer scheduling, posting hours and events.  The capabilities are nice for allowing public access, embedding into web pages, etc...   We wouldn't call the entire thing "perfect", but it has a really low cost of ownership with a high level of capabilities.
