The bottles are pressurized with the built-in pump on top. The benefit is that you just pull and hold the trigger to spray, instead of repeatedly pumping the trigger, so the trigger mechanism lasts much longer. They're fantastic to use (no carpal tunnel!), and you can spray for a long time before you have to re-pump to top up the pressure.
Not sure how they'd stand up in community bike shop use. Possibly not that well since patrons might get confused by the pump and the lever and just start reefing on everything. But they're built to withstand commercial use (much moreso than stuff you buy from Home Depot).

RE: owning Property...Troy Bike Rescue went through the process of buying a building from the City on auction. two collective members bought it personally for $5000 (because we had an anti-nonprofit administration at the time) and then rented it to the collective, then after a year it was sold to the collective for the original price plus what was put into it (no profit), which ended up being 11000 or so. we were able to do this because we were lucky enough to get a low interest loan from an awesome org called the Community Loan Fund of the Capital Region. we now pay them $160/month which is basically a low-interest mortgage payment.... the collective taking ownership has enabled us to apply for tax exemption, all in all making it well worth all the work it has taken to do it. however it has meant putting a lot of energy in to doing renovation work which is thankfully almost to a stable state.
